The use of Artificial Intelligence to design restaurant dishes
Introduction
Artificial Intelligence (AI) is transforming many sectors, and the restaurant industry is no exception.
Through data analysis, assisted creativity, and automation, AI is becoming a strategic tool for designing innovative dishes that meet customer expectations and are profitable for restaurant owners.

Example of a menu
Here is an example of a menu featuring duck breast, with suggestions for appetizers, main courses, and desserts:
Appetizer:
- Lamb's Lettuce and Pear Salad: Fresh lamb's lettuce, sliced pears, walnuts, and balsamic vinaigrette.
- Pan-Seared Foie Gras: Served with fig compote and gingerbread.
Main Course:
- Roasted Duck Breast: Served with a honey and balsamic vinegar sauce, accompanied by Sarlat-style potatoes and seasonal vegetables.
- Duck Breast with Cherries: Grilled duck breast served with a cherry reduction and homemade mashed potatoes.
Dessert:
- Tarte Tatin: Caramelized apple tart served warm with a scoop of vanilla ice cream.
- Dark chocolate mousse: Light and creamy, served in a glass with hazelnut pieces.
### Wine Suggestions:

Other examples of menus created with AI.

These dishes and this cake were designed using artificial intelligence, following a human-guided creative process. After receiving specific information—such as the type of dish, main ingredients, visual ambiance, colors, presentation style, and sometimes even culinary inspiration—the AI analyzed this data to generate coherent and harmonious compositions.
Thanks to its analytical and generation capabilities, it then proposed unique visual creations, adjusting shapes, textures, and aesthetic details to best match the provided instructions. Each dish and cake is thus the result of a collaboration between the initial human idea and the algorithmic creativity of artificial intelligence.
Example for Salt Cod Brandade:
Salt cod brandade is a traditional French dish originating from the south of France, primarily from the Nîmes region. Here is a simple recipe to prepare a delicious salt cod brandade.

- 2 cloves of garlic
- 150 ml olive oil
- 100 ml milk
- 1 lemon for the juice
- Salt and pepper
- Flat-leaf parsley for garnish (optional)
Instructions
1. Preparing the Salt Cod
- If the salt cod is slightly salty, soak it in water for 24 hours, changing the water several times to remove the salt. Then drain and flake it.
2. Cooking the Potatoes
- Peel the potatoes and cut them into pieces. Cook them in a saucepan of boiling salted water until tender. Tender, about 20 minutes. Drain.
3. Cooking the cod
